Peach & Berry Cobbler

I’ve been completely craving spring lately… maybe its because I’m accustomed to the Arizona climate but regardless I’m ready for warmer weather… sundresses… and flip-flops. The other day in the middle of snow sleet and rain,  I decided to make of all things a fruit cobbler.   The mixture of peach, blackberry, strawberry was perfection.

I’m finding that cutting a few corners in baking helps quite a bit…  my secret ingredient in this is 1 1/2 C Milk and 1/2 c. of Caramel flavored cream.  It add the perfect amount of added sweetmess in the crust.

The smell of cinnamon and nutmeg filling the house was breathtaking.

Peach & Berry Cobbler

2 c. Bisquick

1/2 c whole milk

1/2 c caramel flavored cream

1/2 stick of salted butter

2 c. sliced peaches

1/2 c. whole strawberries

1/2 c. blackberries

1/2 c. blueberries

1/2 c. sugar

1/2.c dark brown sugar

1 T. cinnamon

1/2 T. nutmeg

1/2 t. sea salt

Preheat oven to 350 degrees

In a large mixing bowl, add fruit, sugar,& spices and set to rest while mixing the dry & wet ingredients. In a separate mixing bowl. cut the butter into the Bisquick mix until tiny balls are formed then mix together with mix & cream.  Grease a pie pan or dish and add fruit in first and top with biscuit mixture.  Bake for 30 mins or until golden brown crust forms.
